    RECIPES

    Lamb with Ras el Hanout

    Recipe by Ludo Lefebvre

     

    INGREDIENTS:

    2 tomatoes peeled, seeded and chopped

    3 large eggs, beaten to blend

    ¼ cup fresh mint leaves, chopped

    ¼ cup onion, finely chopped

    2 tbs. parsley, chopped

    3 tbs. Ras el Hanout

    1 tbs. tomato paste

    1 tbs. fleur de sel

    2 tsp. freshly ground cumin

    ½ tsp. freshly ground white pepper

    2 lbs. lamb, freshly ground

    2 tbs. extra virgin olive oil

     

    Sit the first 10 ingredients in a large bowl to blend. Add the lamb and extra virgin olive oil. Mix just until blended. Cover and refrigerate.

     

    Herbs of Provence Shrimp

    Recipe by Ludo Lefebvre

    INGREDIENTS

    1 lb. uncooked, unpeeled medium shrimp

    2 tbs. French Barbecue Herbs of Provence

    2 tbs. grape seed oil

    2 tbs. unsalted butter

    5 tbs. good dry white wine

    Fleur de sel

    Freshly ground black pepper

     

    Heat oil in a large skillet over medium heat. Add shrimp and lightly season with fleur de sel. Cook both sides of the shrimp until shells begin to brown, about 2 minutes each side. Add butter. Let butter melt and then add the white wine. Bring to a boil and reduce for 2 minutes. Add the spices and let infuse for 30 seconds. Remove from heat. Season shrimp to taste with fleur de sel and pepper. Serve immediately.
